Merlot - liquid and solid!

I've been a fan of liquid Merlots for years. Now along comes the solid version - a cheese called Merlot.

It was created by the Sartori Company of Wisconsin and is sold under the BellaVitano brand. I understand it starts out as something like a Parmesan which then is immersed in Merlot wine. I'm thinking the longer, the better.

Needless to say that it pairs really well with it's liquid counterpart.

Sorry that I don't have a humorous closing line here - it is just seriously good stuff.
